Iced Ginger cookies
These delicious cookies are fairly easy to make and they're sure to be a hit with your shower party guests too.
Ingredients for the cookies
3 and a half ounces of all-purpose flour
Quarter teaspoon baking powder
2 and a half ounces unsalted butter, room temperature
1 and a half ounces light muscovado sugar
1 teaspoon ground ginger
Quarter teaspoon ground cinnamon
Quarter teaspoon pumpkin pie spice (mixed spice)
Ingredients for the icing
2 ounces powdered sugar (confectioners' or icing sugar)
2 teaspoons of warm water

A baking tray
Parchment paper
How to make the cookies
Step 1 - Preheat the oven to 400 degrees (200°C) Then line a baking sheet with parchment paper.
Step 2 - Put the flour, baking powder, muscovado sugar, ginger, cinnamon and the pumpkin pie spice into a mixing bowl.
Step 3 - Cut the butter into cubes, then add this to the bowl.
Step 4 - Using your fingertips rub the butter into the flour.
Step 5 - Then bit by bit knead the mixture into a dough.
Step 6 - Place the dough between 2 sheets of parchment paper and roll out thinly.
Step 7 - Carefully remove the top sheet of parchment paper; then cut the dough into cute shapes with a cookie cutter.
Step 8 - Transfer the cookie dough shapes to a lined baking sheet; and bake for about 5 or 6 minutes, or until they're a pale golden color.
Step 9 - When done transfer the cookies to a cooling rack, and leave to cool.
Icing your cookies
Step 1 - Put the powdered sugar into a small mixing bowl. Then add the warm water a little at a time, and mix well - if you think the icing is too runny simply add a little more powdered sugar; if too thick a little more warm water.
Step 2 - Ice your cookies using the back of a teaspoon or a knife - whichever you find easiest.
Cook's tip
Don't forget you can buy cookie cutters in lots of cute baby themed shapes; including baby bottles, baby carriages, rocking horses, teddies and rubber duckies. Remember too that cookie cutters make really sweet favors.
