Cucumber Sandwiches

These are a great finger food idea for parties, and cucumber sandwiches are just perfect for baby showers, and an Afternoon Tea.


English cucumber
Thinly sliced bread
Butter, at room temperature

How To Make

Step 1 – Thinly spread one side of each slice of bread with butter right up to the edges, and set aside.
Step 2 – Peel the cucumber – a vegetable peeler can work really well for this job.
Step 3 – Slice the cucumber very thinly.
Step 4 – Arrange a layer of cucumber on a slice of buttered bread.
Step 5 – Top with another slice of buttered bread.
Step 6 – Carefully cut the crusts off.
Step 7 – Cut the sandwich into 4 neat triangles, three fingers, four squares, or into a cute baby themed shape.
Step 8 – Now simply repeat steps 4 to 7 with your remaining slices of buttered bread, and cucumber.

Sandwich Tips

Many people like to peel, slice, and lightly salt their cucumber then leave it to stand on a plate for a while, before using it in their sandwiches. And some, before topping with a second slice of buttered bread, like to lightly sprinkle white pepper over the cucumber.
